- In a large mixing bowl, add 1 cup of peanut butter, ½ cup of honey, and 2 cups of oats. Stir with a wooden spoon until the mixture is well combined and sticky.
- Fold in ½ cup of shredded coconut, 2 tablespoons of chia seeds, and 2 tablespoons of flaxseed meal. Continue to mix until evenly distributed throughout the dough.
- Gently fold in ½ cup of chocolate chips or chunks into the mixture, ensuring they are spread throughout the dough.
- Take small portions of the mixture and roll them into balls about 1 inch in diameter, aiming for around 16-20 energy balls.
- Place the formed energy balls on a plate or in an airtight container. Refrigerate for at least 30 minutes.
- Transfer your energy balls to an airtight container and store in the refrigerator for up to 10 days or freeze for up to 6 months.
