- Boil 4 cups of water in a large pot. Add 1 tablespoon of salt and penne pasta. Cook until al dente, about 8-10 minutes. Reserve ½ cup pasta water.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Sauté the minced garlic for about 1 minute until fragrant.
- Add 2-3 tablespoons of chili crisp to the skillet and stir for 20 seconds.
- Mix in 1 tablespoon of tomato paste and 2 teaspoons of sesame seed oil. Cook for 30 seconds.
- Add 1 can of whole peeled tomatoes with juices, a pinch of salt, and 1 teaspoon of sugar. Mash the tomatoes and let simmer for 10-15 minutes.
- If the sauce is too thick, add reserved pasta water to reach desired consistency.
- Combine the cooked pasta with the sauce, tossing for 1-2 minutes.
- Serve topped with freshly grated cheese and chopped parsley.
