- Preheat your oven to 375°F (190°C). Grease your loaf pan.
- Sauté the diced green bell pepper and onion in olive oil over medium heat for about 5 minutes.
- In a mixing bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined.
- Press half the meat mixture into the bottom of the greased loaf pan. Layer four slices of provolone cheese and the sautéed vegetables, then cover with the remaining meat mixture.
- Bake for 45-50 minutes until the internal temperature reaches 160°F (70°C). Add four more slices of provolone on top in the last 5 minutes of baking.
- Let the meatloaf rest for 5-10 minutes. Slice and serve warm, garnished with parsley.
