Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Generously season the pork tenderloin with salt and freshly ground black pepper on all sides.
  3. In a large skillet, heat a drizzle of olive oil over medium-high heat until shimmering. Carefully add the pork tenderloin and sear it for about 3-4 minutes on each side.
  4. Using the same skillet, lower the heat to medium and add the minced garlic and finely chopped shallot. Sauté for about 2-3 minutes.
  5. Pour in ½ cup of chicken broth, followed by ½ cup of heavy cream, 2 tablespoons of Dijon mustard, and 1 teaspoon of fresh thyme leaves into the skillet. Stir everything together.
  6. Return the seared pork tenderloin to the skillet, spoon some sauce over the top, and roast in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Once cooked, remove the pork from the oven and let it rest for about 5 minutes. Then slice and serve drizzled with the sauce.
