- Preheat your oven to 400°F (200°C).
- Generously season the pork tenderloin with salt and freshly ground black pepper on all sides.
- In a large skillet, heat a drizzle of olive oil over medium-high heat until shimmering. Carefully add the pork tenderloin and sear it for about 3-4 minutes on each side.
- Using the same skillet, lower the heat to medium and add the minced garlic and finely chopped shallot. Sauté for about 2-3 minutes.
- Pour in ½ cup of chicken broth, followed by ½ cup of heavy cream, 2 tablespoons of Dijon mustard, and 1 teaspoon of fresh thyme leaves into the skillet. Stir everything together.
- Return the seared pork tenderloin to the skillet, spoon some sauce over the top, and roast in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
- Once cooked, remove the pork from the oven and let it rest for about 5 minutes. Then slice and serve drizzled with the sauce.
