  • 1 cup Mexican Blend Cheese shredded
  • ½ cup Mayonnaise can substitute with Greek yogurt
  • Black Pepper to taste
  • 1 bag Chili Cheese Fritos crushed for topping
  • Fresh Chopped Cilantro optional garnish

Step-by-Step Instructions
  1. In a large mixing bowl, combine 2 cups of drained corn, diced red bell pepper, and 1 cup of shredded Mexican blend cheese.
  2. Spoon in ½ cup of mayonnaise and sprinkle with freshly ground black pepper to taste. Mix gently until well-coated.
  3. Crush the bag of Chili Cheese Fritos gently, then pour them into the bowl and fold them in carefully.
  4. Transfer the salad to a serving dish and garnish with chopped cilantro. Serve immediately.
