Step-by-Step Instructions
  1. Start by halving and pitting 12 fresh cherries, ensuring to remove all pits for a smooth syrup.
  2. In a small saucepan, combine the halved cherries, 1/2 cup of water, 1/2 cup of granulated sugar, and 1 teaspoon of pure vanilla extract. Heat over medium heat until it bubbles, stirring occasionally.
  3. Once bubbling, use a potato masher to gently mash the cherries, releasing their juicy goodness into the syrup. Continue to simmer for an additional 10 minutes until thickened.
  4. Remove from heat and let the cherry vanilla syrup cool for 15 minutes to meld flavors.
  5. Using a fine sieve, strain the cooled syrup into a clean jar, discarding cherry solids to retain a vibrant syrup.
  6. To serve, fill a glass with ice, pour in the cherry vanilla syrup, and top with soda water. Stir gently and enjoy!
