- Hull and dice about 2 cups of fresh ripe strawberries. Place the diced strawberries into a small saucepan along with a cup of cane sugar and a cup of filtered water.
- Set the saucepan over medium-high heat and bring the mixture to a gentle simmer, stirring occasionally for about 5 minutes.
- Reduce the heat to low and let the mixture simmer for an additional 15 minutes, stirring occasionally until it thickens.
- Remove from heat and stir in 2 tablespoons of freshly squeezed lemon juice.
- Let it cool for 5 to 10 minutes, then strain the syrup through a fine mesh strainer.
- To serve, fill a glass with ice, pour in 1 cup of chilled sparkling water, and add in 2 tablespoons of the syrup.
