Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Slice the cauliflower into thick steaks, approximately 1-inch each.
  3. In a bowl, mix olive oil, salt, pepper, smoked paprika, garlic powder, ground cumin, and turmeric.
  4. Coat the cauliflower steaks with the seasoning mixture.
  5. Nestle whole heads of garlic onto the baking sheet.
  6. Roast in the oven for 25-30 minutes until golden brown.
  7. After roasting, squeeze the garlic into a blender with chickpeas, tahini, lemon juice, salt, and pepper. Blend until smooth.
  8. Spread hummus on a plate, top with roasted cauliflower, garnish with parsley, and drizzle chili oil.
