Ingredients
  

For the Noodles
  • 12 ounces Udon Noodles opt for vacuum-packed for ease
For the Protein
  • 1 pound Shrimp can substitute with chicken or tofu
For the Vegetables
  • 3 cloves Garlic minced
  • 1 medium Yellow Onion can use red onion
  • 8 ounces White Mushrooms or shiitake/button mushrooms
  • 1 medium Carrot can substitute with zucchini or bell peppers
  • 2 stalks Spring Onion use both green and white parts
For the Sauce
  • 3 tablespoons Soy Sauce regular or low-sodium
  • 2 tablespoons Oyster Sauce skip for vegetarian
  • 1 tablespoon Dark Soy Sauce adds color and richness
  • 1 tablespoon Rice Vinegar or apple cider vinegar
  • 1 tablespoon Brown Sugar can replace with honey or coconut sugar
  • 1 tablespoon Toasted Sesame Oil or regular sesame oil
Seasoning
  • to taste Salt
  • to taste Freshly Crushed Black Pepper

Method
 

Step-by-Step Instructions
  1. Cook the udon noodles according to the package instructions, about 3-4 minutes. Drain and rinse under cold water, then toss with neutral oil.
  2. In a large pan or wok, heat 1 tablespoon of oil over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant. Add sliced mushrooms and stir-fry for 2-3 minutes. Incorporate sliced onions and carrots, cooking until softened. Season with salt and pepper, then remove from pan.
  3. In the same pan, add 2 tablespoons of oil and increase heat to high. Add shrimp, season with soy sauce and salt. Stir-fry for 3-4 minutes until pink and opaque. Remove from pan.
  4. Add cooked udon noodles to the pan, stirring on high heat for 2-3 minutes until lightly crisp. Uniformly heat noodles, starting to brown on edges.
  5. Pour sauce over the noodles, gently fold in sautéed vegetables and shrimp, mixing thoroughly for about 2 minutes.
  6. Remove from heat and sprinkle with chopped spring onions. Serve immediately, garnishing with sesame seeds if desired.
