- Cook the udon noodles according to the package instructions, about 3-4 minutes. Drain and rinse under cold water, then toss with neutral oil.
- In a large pan or wok, heat 1 tablespoon of oil over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant. Add sliced mushrooms and stir-fry for 2-3 minutes. Incorporate sliced onions and carrots, cooking until softened. Season with salt and pepper, then remove from pan.
- In the same pan, add 2 tablespoons of oil and increase heat to high. Add shrimp, season with soy sauce and salt. Stir-fry for 3-4 minutes until pink and opaque. Remove from pan.
- Add cooked udon noodles to the pan, stirring on high heat for 2-3 minutes until lightly crisp. Uniformly heat noodles, starting to brown on edges.
- Pour sauce over the noodles, gently fold in sautéed vegetables and shrimp, mixing thoroughly for about 2 minutes.
- Remove from heat and sprinkle with chopped spring onions. Serve immediately, garnishing with sesame seeds if desired.
