Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. Toss with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
  3. Crumble the Italian sausage into a skillet over medium-high heat. Cook for 6–8 minutes until browned. Remove from the skillet.
  4. In the same skillet, add olive oil if needed and sauté minced garlic for 1–2 minutes until fragrant.
  5. In a small bowl, whisk together honey, soy sauce, Dijon mustard, apple cider vinegar, and red pepper flakes. Pour into the skillet and simmer for 2–3 minutes.
  6. Return the sausage to the skillet and simmer for an additional 2 minutes.
  7. Add the roasted sweet potatoes to the skillet, tossing until well-coated with the sauce.
  8. Transfer to a serving platter and garnish with chopped parsley. Serve warm.
