- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes. Toss with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
- Crumble the Italian sausage into a skillet over medium-high heat. Cook for 6–8 minutes until browned. Remove from the skillet.
- In the same skillet, add olive oil if needed and sauté minced garlic for 1–2 minutes until fragrant.
- In a small bowl, whisk together honey, soy sauce, Dijon mustard, apple cider vinegar, and red pepper flakes. Pour into the skillet and simmer for 2–3 minutes.
- Return the sausage to the skillet and simmer for an additional 2 minutes.
- Add the roasted sweet potatoes to the skillet, tossing until well-coated with the sauce.
- Transfer to a serving platter and garnish with chopped parsley. Serve warm.
