Step-by-Step Instructions
  1. Soak the rice noodles in boiling water for 2-3 minutes, then drain and rinse in cold water.
  2. In a mixing bowl, combine soy sauce, oyster sauce, and chilli paste. Whisk until smooth and set aside.
  3. Heat oil in a wok over medium-high heat. Add sliced chicken and stir-fry for about 5 minutes until cooked through.
  4. Add minced garlic and stir for 30 seconds. Then add vegetables and stir-fry for 2-3 minutes.
  5. Add soaked noodles and sauce to the pan. Toss gently for about 2 minutes until well-coated.
  6. Drizzle with chilli oil and rice wine vinegar before serving. Serve hot.
