Step-by-Step Instructions
  1. In a large mixing bowl, combine sliced chicken with egg white, cornstarch, salt, and pepper. Mix thoroughly and marinate for 10-15 minutes.
  2. Heat 3 tablespoons of vegetable oil in a skillet over medium-high heat. Fry marinated chicken in batches for 5-7 minutes until golden brown.
  3. In the same skillet, add 1 tablespoon of sesame oil, then minced garlic, ginger, and dried chilies. Sauté for 1-2 minutes until fragrant.
  4. Pour in ketchup, soy sauce, chili garlic sauce, vinegar, and sugar. Stir and let simmer for 2-3 minutes.
  5. Toss the fried chicken back into the skillet to coat in sauce. Simmer for an additional minute.
