- Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- In a large skillet over medium heat, cook the ground beef and diced onion until browned, about 6–8 minutes.
- Drain excess fat, reduce heat to low and add 1 cup of red enchilada sauce. Simmer for 5 minutes.
- Warm corn tortillas in the microwave for 30 seconds, fill them with the beef mixture, sprinkle cheese, roll and place seam-side down in the baking dish.
- Pour the remaining red enchilada sauce over the rolled tortillas and sprinkle with leftover cheese.
- Bake in the preheated oven for about 25 minutes until cheese is golden and bubbly.
- Garnish with sour cream and cilantro before serving.
