Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a large skillet over medium heat, cook the ground beef and diced onion until browned, about 6–8 minutes.
  3. Drain excess fat, reduce heat to low and add 1 cup of red enchilada sauce. Simmer for 5 minutes.
  4. Warm corn tortillas in the microwave for 30 seconds, fill them with the beef mixture, sprinkle cheese, roll and place seam-side down in the baking dish.
  5. Pour the remaining red enchilada sauce over the rolled tortillas and sprinkle with leftover cheese.
  6. Bake in the preheated oven for about 25 minutes until cheese is golden and bubbly.
  7. Garnish with sour cream and cilantro before serving.
