  • 200 grams Sausage sliced
  • 1 cup Kimchi well-fermented

For the Stew
  • 200 grams Tofu firm, cubed
  • 100 grams Enoki Mushrooms or preferred variety
  • 100 grams Rice Cakes optional
  • 2 packs Ramen Noodles or any instant noodles
  • 100 grams Cheese mozzarella or cheddar
For Garnish
  • 2 stalks Green Onions chopped

Method
 

Step-by-Step Instructions
  1. Prepare the sauce by combining minced garlic, gochugaru, gochujang, soy sauce, mirin, sugar, and black pepper in a mixing bowl. Stir until smooth.
  2. Layer the prepared Spam, sausage, tofu, rice cakes, onion, enoki mushrooms, and kimchi in a pot.
  3. Pour the prepared sauce over the layered ingredients and add chicken broth until just submerged.
  4. Cover and bring to a boil over medium-high heat, about 5–7 minutes.
  5. Add ramen noodles and cheese, then cover and cook for an additional 4–5 minutes.
  6. Garnish with chopped green onions before serving hot.
