- Start by washing and chopping your vegetables, including broccoli, carrots, and peas, into bite-sized pieces. Cut the chicken into small chunks as well.
- In your crockpot, layer the ingredients starting with the chicken pieces at the bottom. Next, add the chopped vegetables, and finally sprinkle the rice evenly on top.
- Pour the soy sauce and drizzle the sesame oil over the layered ingredients, ensuring everything is well coated. Gently combine the top layers without disturbing the bottom too much.
- Cover the crockpot and set it to low heat for 4-6 hours, or high heat for 2-3 hours.
- Once cooked, take two forks and shred the chicken directly in the crockpot, mixing it back into the rice and vegetables. Serve topped with green onions and sesame seeds.
