- In a wide bowl, crack three eggs and whisk them. Add ½ cup of milk, chopped red onion, minced green chili, ground turmeric, and kosher salt. Fold in chopped cilantro. Whisk until combined.
- Take 4-6 slices of bread and dip each into the egg mixture, pressing gently. Hold for about 15 seconds, then flip and repeat to coat both sides.
- Heat a non-stick or cast-iron pan over medium heat. Add a tablespoon of oil. Once hot, place the soaked bread slices onto the pan. Cook for about 2-3 minutes until golden brown.
- Flip each slice carefully and continue cooking for another 2-3 minutes until both sides are crispy.
- Remove the toast from the pan and serve hot with ketchup and chutney. Enjoy!
