Ingredients
  

Filling
  • 8 oz Feta Cheese crumbled, can substitute with goat cheese
  • 4 oz Cream Cheese softened, full-fat or low-fat
  • 2 tbsp Fresh Parsley chopped, can substitute with dill or spinach
  • 1 clove Garlic minced, fresh preferred
Phyllo Dough
  • 1 package Phyllo Dough fully thawed
  • 4 tbsp Butter melted, can substitute with olive oil
Optional Add-ins
  • 1 cup Sautéed Spinach for extra nutrition and flavor
  • 1/2 cup Sun-Dried Tomatoes or Olives for added Mediterranean flair

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a mixing bowl, combine crumbled feta cheese, softened cream cheese, minced garlic, and chopped parsley. Mix until well blended and allow to chill for about 15 minutes.
  3. Stack three sheets of phyllo dough on a flat surface, brushing each layer with melted butter, and cut into 3-inch squares.
  4. Press each phyllo square into the muffin cups and spoon about 1 teaspoon of filling into each shell.
  5. Bake for 15-18 minutes until the phyllo is golden brown and crispy.
  6. Allow to cool in the tin for 5 minutes before serving.
