- Preheat your oven to 375°F (190°C).
- Season the chicken thighs with salt, pepper, onion powder, garlic powder, smoked paprika, thyme, and rosemary.
- Sear the chicken thighs in olive oil for about 4-5 minutes on each side.
- Sauté sliced red onion in the skillet for about 3 minutes, then add sliced Honeycrisp apples and cook for another 3-4 minutes.
- Pour in the apple cider and chicken broth or wine, stir in Dijon mustard and minced garlic, and simmer for 2-3 minutes.
- Nestle the seared chicken in the sauce, baste, and transfer to the oven to roast for 25-30 minutes.
- Let the chicken rest for a few minutes before serving.
