  • 4 pieces Chicken Thighs With skin intact
  • 2 tablespoons Olive Oil For searing

For the Seasoning
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Fresh Thyme
  • 1 teaspoon Fresh Rosemary
For the Vegetables & Fruit
  • 1 cup Red Onion Sliced
  • 2 pieces Honeycrisp Apples Sliced
For the Sauce
  • 1 cup Apple Cider
  • 1/2 cup Chicken Broth or White Wine
  • 1 tablespoon Dijon Mustard
Finishing Touches
  • 2 cloves Garlic Minced
  • 2 tablespoons Salted Butter

Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs with salt, pepper, onion powder, garlic powder, smoked paprika, thyme, and rosemary.
  3. Sear the chicken thighs in olive oil for about 4-5 minutes on each side.
  4. Sauté sliced red onion in the skillet for about 3 minutes, then add sliced Honeycrisp apples and cook for another 3-4 minutes.
  5. Pour in the apple cider and chicken broth or wine, stir in Dijon mustard and minced garlic, and simmer for 2-3 minutes.
  6. Nestle the seared chicken in the sauce, baste, and transfer to the oven to roast for 25-30 minutes.
  7. Let the chicken rest for a few minutes before serving.
