Ingredients
  

For the Salmon Balls
  • 1 lb Fresh Skinless Boneless Salmon
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can be used
  • 1 small Red Onion Finely chopped
  • 2 tbsp Fresh Dill Can substitute with parsley or tarragon
  • 1 tbsp Dijon Mustard Yellow mustard can be used
  • 1 large Egg For vegan option, use flax egg or chia seed gel
  • 1 tbsp Lemon Juice
  • 1 tbsp Lemon Zest
  • 1 tsp Garlic Powder Can use fresh minced garlic
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Olive Oil Coconut oil can be used
For the Creamy Avocado Sauce
  • 2 ripe Avocados Ensure they're ripe
  • 1 cup Plain Greek Yogurt Can substitute with sour cream
  • 1 tbsp Lime Juice Can use lemon juice
  • 2 tbsp Fresh Cilantro Can substitute with parsley
  • 1 clove Garlic (minced) Adjust quantity to taste
  • 2 tbsp Water Add more for desired thickness
  • 1 tsp Red Pepper Flakes Optional for spice
  • Garnishes Fresh dill sprigs and lemon wedges

Method
 

Preparation
  1. Combine fresh salmon, panko breadcrumbs, red onion, dill, Dijon mustard, egg, lemon juice, lemon zest, garlic powder, salt, and pepper in a mixing bowl and mix until just combined.
  2. Shape mixture into 1-inch balls and place on a lined baking sheet.
  3. Chill salmon balls in the refrigerator for at least 30 minutes for firmer texture.
  4. Heat olive oil in a skillet over medium heat until shimmering.
  5. Cook salmon balls for 3-4 minutes on each side until golden brown.
  6. Drain cooked salmon balls on paper towels.
  7. Blend avocados, Greek yogurt, lime juice, cilantro, minced garlic, water, salt, pepper, and red pepper flakes until smooth.
  8. Taste and adjust seasoning of the avocado sauce.
  9. Serve salmon balls warm with avocado sauce for dipping and garnish with dill and lemon wedges.
