  • 4 cups Chicken Broth opt for low-sodium for a healthier choice
  • 2 tablespoons Tomato Paste crushed tomatoes can work as well
For Garnish
  • 1 tablespoon Chopped Fresh Italian Parsley optional but recommended
For Serving
  • 1 package Roasted Garlic Mashed Potato Mix prepare as directed

Step-by-Step Instructions
  1. Prep Ingredients: Chop the bacon, quarter the mushrooms, and half the carrots. Finely chop the garlic.
  2. Layer Ingredients: In the slow cooker, layer bacon, mushrooms, carrots, and garlic, then scatter onions, bay leaves, and thyme.
  3. Prepare Chicken: Season the chicken with salt and pepper and place it on top of the vegetables.
  4. Add Liquids: Pour chicken broth around the chicken and stir in the tomato paste.
  5. Cook: Cover and cook on low for about 4 hours until the chicken reaches 165°F (74°C).
  6. Serve: Remove chicken, allow to rest, garnish with parsley, and serve with mashed potatoes.
