Step-by-Step Instructions
  1. Preheat your oven to 430°F (220°C).
  2. Combine the diced sweet potatoes with minced garlic, olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
  3. Bring a large pot of salted water to a boil, add short pasta, and cook according to package instructions. Reserve 2/3 cup of pasta water before draining.
  4. Heat remaining olive oil and butter in a skillet, fry sage leaves for about 1-2 minutes until crispy. Drain on paper towels.
  5. Add roasted sweet potatoes to the skillet with drained pasta. Mash half of the sweet potatoes, then add heavy cream and crumbled goat cheese, mix with reserved pasta water.
  6. Serve topped with crispy sage, additional olive oil, grated Parmesan, and crushed red pepper flakes if desired.
