- Preheat your oven to 430°F (220°C).
- Combine the diced sweet potatoes with minced garlic, olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
- Bring a large pot of salted water to a boil, add short pasta, and cook according to package instructions. Reserve 2/3 cup of pasta water before draining.
- Heat remaining olive oil and butter in a skillet, fry sage leaves for about 1-2 minutes until crispy. Drain on paper towels.
- Add roasted sweet potatoes to the skillet with drained pasta. Mash half of the sweet potatoes, then add heavy cream and crumbled goat cheese, mix with reserved pasta water.
- Serve topped with crispy sage, additional olive oil, grated Parmesan, and crushed red pepper flakes if desired.
