  • 1 medium Yellow Onion chopped
  • 3 cloves Garlic minced
  • 1 medium Jalapeño chopped, seeds removed for less heat
  • 28 oz Fire Roasted Tomatoes
  • 2 tbsp Taco Seasoning or homemade seasoning
  • 1 can Green Chiles mild or omitted to reduce spice
  • 4 cups Chicken Broth or vegetable broth for vegetarian option
  • 1 can Pinto Beans drained and rinsed
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn can substitute frozen corn
  • 1 tsp Kosher Salt adjust to taste
For the Toppings
  • 1 cup Sour Cream or Greek yogurt
  • 1/4 cup Cilantro chopped
  • 1 cup Cheddar Cheese shredded
  • 1 medium Avocado diced

Method
 

Step-by-Step Instructions
  1. In a large Dutch oven, heat over medium heat and add the ground beef along with the chopped yellow onion. Cook for 6-8 minutes until browned and onions are softened.
  2. Add the minced garlic and chopped jalapeño to the pot, stirring continuously for about 2 minutes.
  3. Stir in the fire-roasted tomatoes, taco seasoning, green chiles, chicken broth, corn, pinto beans, and black beans. Bring to a boil.
  4. Reduce the heat to medium-low and partially cover the pot. Simmer for 20 minutes.
  5. Ladle the soup into bowls and garnish with toppings like sour cream, cilantro, cheddar cheese, and avocado.
