- Heat 1 tablespoon of sesame oil in a skillet over medium-high heat. Add diced onion and sauté for 2-3 minutes until soft. Incorporate minced garlic and grated ginger, stirring continuously for another 2 minutes.
- Add ground chicken to the skillet, breaking it apart with a spatula. Season with salt and pepper. Cook for approximately 3-4 minutes or until browned.
- In a small bowl, whisk together 3 tablespoons of Tamari, 2 tablespoons of Thai sweet red chili sauce, lime juice, and maple syrup or honey.
- Pour the sauce over the chicken mixture, add chopped cashews, and toss everything to coat evenly. Reduce heat and simmer for 2 minutes.
- Remove from heat, then add shredded carrots, chopped scallions, and chopped cilantro. Stir to combine.
- To serve, take leaves of butter lettuce and spoon the chicken filling into the center. Drizzle with any remaining sauce and top with optional sesame seeds.
