Ingredients
  

For the Filling
  • 1 pound ground chicken can substitute with turkey or tofu
  • 1 tablespoon sesame oil vegetable oil can be used if necessary
  • 1 onion, diced yellow or white onion works best
  • 2 cloves garlic, minced fresh garlic is recommended
  • 1 tablespoon fresh ginger, grated pre-minced ginger paste can be used
  • 3 tablespoons Tamari (low sodium) or Soy Sauce coconut aminos are a gluten-free option
  • 2 tablespoons Thai Sweet Red Chili Sauce any similar chili sauce can be used as a substitute
  • 1 lime juice freshly squeezed lime is preferred
  • 1 tablespoon maple syrup or honey use agave syrup for a vegan option
  • 1/2 cup chopped cashews substitute with almonds or peanuts if desired
  • 1 cup shredded carrots for ease of mixing
  • 1/4 cup chopped scallions chives can be used as an alternative
  • 1/4 cup chopped cilantro omit or substitute with parsley if preferred
For the Wraps
  • 1 head butter lettuce can use Romaine or other large leaf lettuces

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of sesame oil in a skillet over medium-high heat. Add diced onion and sauté for 2-3 minutes until soft. Incorporate minced garlic and grated ginger, stirring continuously for another 2 minutes.
  2. Add ground chicken to the skillet, breaking it apart with a spatula. Season with salt and pepper. Cook for approximately 3-4 minutes or until browned.
  3. In a small bowl, whisk together 3 tablespoons of Tamari, 2 tablespoons of Thai sweet red chili sauce, lime juice, and maple syrup or honey.
  4. Pour the sauce over the chicken mixture, add chopped cashews, and toss everything to coat evenly. Reduce heat and simmer for 2 minutes.
  5. Remove from heat, then add shredded carrots, chopped scallions, and chopped cilantro. Stir to combine.
  6. To serve, take leaves of butter lettuce and spoon the chicken filling into the center. Drizzle with any remaining sauce and top with optional sesame seeds.

Notes
