Step-by-Step Instructions
  1. Prepare the Marinade by finely chopping garlic, shallots, and lemongrass.
  2. Combine Ingredients in a bowl with garlic, shallots, lemongrass, fish sauce, dark soy sauce, sugar, and optional water.
  3. Marinate the Chicken for 30 minutes to 1 hour, or overnight for deeper flavor.
  4. Preheat the Grill to medium heat, around 350°F to 400°F, and oil the grates.
  5. Grill the Chicken for about 12-15 minutes, flipping halfway through, until internal temperature reaches 165°F.
  6. Rest the Chicken for about 5 minutes before slicing against the grain.
