Equipment

  • Small pot
  • Fine mesh sieve
  • seal container

Method

Preparation Steps
  1. Begin by washing and slicing 2 ripe peaches and 1 cup of strawberries. Combine the sliced fruit in a small pot along with 1 cup of filtered water, 1 cup of cane sugar, and the juice of 1 lemon.
  2. Place the pot over medium heat and bring the mixture to a gentle boil. Stir occasionally to help dissolve the sugar. Once boiling, reduce the heat to low and let it simmer for about 20 minutes.
  3. After simmering, remove the pot from heat and allow the mixture to cool for a few minutes. Carefully strain the syrup into a sealable container, discarding the solid fruit pieces.
  4. To serve, fill a glass with ice cubes. Pour 2 ounces of the chilled syrup over the ice and top off with 6 ounces of sparkling water.
  5. For a delightful finishing touch, consider garnishing your Strawberry Peach Soda with slices of fresh strawberries or peaches.
