Step-by-Step Instructions
  1. Season the chicken thighs with salt, pepper, and paprika and set aside for 10 minutes.
  2. Heat olive oil in a large skillet over medium heat and sauté chopped onion until translucent, about 3-4 minutes. Add garlic and ginger and cook for another minute until fragrant.
  3. Add seasoned chicken thighs to the skillet and sear each side for about 5-6 minutes until golden brown.
  4. Pour in coconut milk and soy sauce, and sprinkle in chili flakes. Mix well to incorporate flavors.
  5. Reduce heat to a simmer, cover the skillet, and let cook for 20-25 minutes until chicken is tender.
  6. Remove from heat, garnish with cilantro, and serve hot over jasmine rice or preferred grain.
