- In a large mixing bowl, combine ground chicken, chopped chipotle peppers in adobo sauce, breadcrumbs, egg, and spices like smoked paprika, ground cumin, garlic powder, onion powder, salt, and pepper. Mix until just combined but not overworked, then shape into four equal patties. Make a small indentation in the center of each patty.
- Heat a grill or skillet over medium-high heat, then lightly grease it. Cook the patties for about 5-6 minutes on each side, flipping when they develop a golden-brown crust. Use a thermometer to check for doneness; the internal temperature should reach 165°F (75°C).
- While the patties are cooking, prepare the chipotle mayo by whisking together mayonnaise, adobo sauce, lime juice, and spices to taste in a small bowl. Adjust the seasoning as needed.
- To assemble the burgers, toast your burger buns lightly, spread chipotle mayo on the bottom bun, then layer with lettuce, cooked chicken patty, tomatoes, onions, and jalapeños. Cap it off with the top half of the bun.
