- Sauté minced garlic in olive oil for 1 minute, then add spinach and cook until wilted (3-4 minutes) before letting it cool and chopping finely.
- In a large bowl, combine ground meat, chopped spinach and garlic, egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper. Mix gently.
- Form small patties, place mozzarella cube in center, encase with meat, and roll into balls. Make approximately 12-16 meatballs.
- Preheat oven to 400°F (200°C) and bake meatballs on a lined sheet for 20-25 minutes or cook in a pan for 6-8 minutes per side.
- Optionally, transfer cooked meatballs to warm marinara sauce and let them simmer for 5-10 minutes.
- Allow meatballs to rest for 5 minutes before serving.
