Method
 

Step-by-Step Instructions
  1. Sauté minced garlic in olive oil for 1 minute, then add spinach and cook until wilted (3-4 minutes) before letting it cool and chopping finely.
  2. In a large bowl, combine ground meat, chopped spinach and garlic, egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper. Mix gently.
  3. Form small patties, place mozzarella cube in center, encase with meat, and roll into balls. Make approximately 12-16 meatballs.
  4. Preheat oven to 400°F (200°C) and bake meatballs on a lined sheet for 20-25 minutes or cook in a pan for 6-8 minutes per side.
  5. Optionally, transfer cooked meatballs to warm marinara sauce and let them simmer for 5-10 minutes.
  6. Allow meatballs to rest for 5 minutes before serving.
