Preparation
- Preheat the oven to 350°F (175°C) and prep your baking tin.
- Grease a mini muffin tin or cake pop mold.
Mix Dry Ingredients
- Whisk together flour, sugar, baking powder, and salt until combined.

- Cream butter and sugar until fluffy. Add eggs, vanilla, and lemon zest, mixing until smooth.
Combine Mixtures
- Gradually fold dry ingredients into wet. Gently fold in chopped strawberries.
Fill and Bake
- Scoop batter into the muffin tin, filling each cup 2/3 full. Bake for 12-15 minutes.
Cool
- Let the muffin tin cool for 10 minutes, then remove the bites to cool completely.
Prepare Glaze
- Mix powdered sugar, lemon juice, and zest to achieve a smooth glaze.
Glaze and Serve
- Dip the tops of cooled bites in glaze and let them set for 15-20 minutes before serving.
