Method
 

Preparation
  1. Preheat your grill to medium-high, around 400°F (200°C). Grill corn for 10–12 minutes, turning until charred. Remove and let cool.
  2. Once cooled, cut kernels from the cob into a large bowl.
  3. Add diced cucumber, chopped onion, and cilantro to the bowl and gently fold together.
  4. In a separate bowl, whisk Greek yogurt, mayonnaise, garlic, lime juice, chili powder, salt and pepper until smooth.
  5. Pour the dressing over the salad mixture and toss gently to coat all ingredients.
  6. Transfer to a covered container and refrigerate for at least 30 minutes before serving.
  7. Before serving, taste and adjust seasoning if necessary. Garnish with additional cilantro and chili powder.
