Preparation
- Preheat your grill to medium-high, around 400°F (200°C). Grill corn for 10–12 minutes, turning until charred. Remove and let cool.
- Once cooled, cut kernels from the cob into a large bowl.
- Add diced cucumber, chopped onion, and cilantro to the bowl and gently fold together.
- In a separate bowl, whisk Greek yogurt, mayonnaise, garlic, lime juice, chili powder, salt and pepper until smooth.
- Pour the dressing over the salad mixture and toss gently to coat all ingredients.
- Transfer to a covered container and refrigerate for at least 30 minutes before serving.
- Before serving, taste and adjust seasoning if necessary. Garnish with additional cilantro and chili powder.
