  • 1 cup Corn Kernels fresh, frozen, or canned
  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Red Onion finely chopped
  • 1/2 cup Feta Cheese or cotija for authenticity
  • 1/4 cup Fresh Cilantro or parsley substitute
For the Creamy Dressing
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Garlic Powder

Method
 

Cooking and Preparing the Salad
  1. Cook the pasta in boiling salted water for 8-10 minutes until al dente, then drain and rinse under cold water.
  2. In a large mixing bowl, combine pasta with corn, tomatoes, red onion, feta, and cilantro. Toss gently.
  3. Whisk together mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss until evenly coated.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
