- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, ground Italian sausage, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until just combined.
- In another bowl, combine the mozzarella cheese, Parmesan cheese, and chopped spinach, if using. Mix well.
- On a sheet of parchment paper, shape the meat mixture into a rectangle about 1/2 inch thick.
- Spread the cheese filling over the meat mixture, leaving about an inch around the edges.
- Starting from one edge, roll the meat mixture tightly, sealing the cheese filling inside.
- Place the rolled meatloaf seam-side down on a baking sheet or in a loaf pan. Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).
- In the last 10 minutes of baking, spread marinara sauce generously over the top.
- Once cooked, let the meatloaf rest for about 10 minutes before slicing.
