Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, ground Italian sausage, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until just combined.
  3. In another bowl, combine the mozzarella cheese, Parmesan cheese, and chopped spinach, if using. Mix well.
  4. On a sheet of parchment paper, shape the meat mixture into a rectangle about 1/2 inch thick.
  5. Spread the cheese filling over the meat mixture, leaving about an inch around the edges.
  6. Starting from one edge, roll the meat mixture tightly, sealing the cheese filling inside.
  7. Place the rolled meatloaf seam-side down on a baking sheet or in a loaf pan. Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).
  8. In the last 10 minutes of baking, spread marinara sauce generously over the top.
  9. Once cooked, let the meatloaf rest for about 10 minutes before slicing.
