- In a medium saucepan, combine water, granulated sweetener, and fresh lemon juice. Stir gently over medium heat until the sweetener fully dissolves, approximately 2-3 minutes.
- Once the syrup base is ready, add fresh or frozen blueberries to the saucepan. Stir and bring it to a gentle simmer over low to medium heat for about 15 minutes.
- Gently mash the blueberries in the saucepan to extract more juice and flavor, continuing to simmer for an additional 8-10 minutes.
- Remove the saucepan from the heat and let it cool. Strain the mixture through a fine mesh strainer into a bowl or jar.
- Cover the strained syrup and place it in the refrigerator to chill for at least 1-2 hours.
- In a tall glass, fill it halfway with club soda over 3-4 ice cubes.
- Carefully pour the chilled blueberry syrup into the glass, swirling it through the club soda.
- Finish your drink by gently pouring half & half on top.
- For an extra touch, add a dollop of whipped cream on top.
