For the Blueberry Syrup
  • 2 cups Water Base for the syrup; no substitutes needed.
  • 1 cup Granulated Sweetener Use erythritol or stevia.
  • 1 tbsp Lemon Juice Freshly squeezed is ideal.
  • 2 cups Blueberries Fresh or frozen can be used.
For the Drink
  • 4 cups Club Soda Ensure it's not tonic water.
  • 1 cup Half & Half Substitute with coconut cream for dairy-free.
  • 1 cup Whipped Cream Optional topping.

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine water, granulated sweetener, and fresh lemon juice. Stir gently over medium heat until the sweetener fully dissolves, approximately 2-3 minutes.
  2. Once the syrup base is ready, add fresh or frozen blueberries to the saucepan. Stir and bring it to a gentle simmer over low to medium heat for about 15 minutes.
  3. Gently mash the blueberries in the saucepan to extract more juice and flavor, continuing to simmer for an additional 8-10 minutes.
  4. Remove the saucepan from the heat and let it cool. Strain the mixture through a fine mesh strainer into a bowl or jar.
  5. Cover the strained syrup and place it in the refrigerator to chill for at least 1-2 hours.
  6. In a tall glass, fill it halfway with club soda over 3-4 ice cubes.
  7. Carefully pour the chilled blueberry syrup into the glass, swirling it through the club soda.
  8. Finish your drink by gently pouring half & half on top.
  9. For an extra touch, add a dollop of whipped cream on top.
