Ingredients

  • 2 cups Cooked Chicken Shred or dice for easy wrapping.
  • 1/2 cup Sweet Chili Sauce Adjust heat as desired.
For the Wrap
  • 4 pieces Tortillas Choose standard or whole wheat.
  • 2 cups Lettuce/Greens Wash and shred before use.
For the Veggies
  • 1 medium Cucumber Slice thinly.
  • 1 medium Carrot Shred finely.
  • 1/2 medium Red Onion Thinly sliced.
  • 1 medium Avocado Slice last to prevent browning.
For Creaminess
  • 1/4 cup Mayonnaise/Greek Yogurt Optional for extra creaminess.
  • 1/2 cup Shredded Cheese Optional for savory flavor.
For Garnish
  • 1/4 cup Fresh Cilantro Optional, for enhanced flavor.
  • Juice of 1 Lime For extra zing.
  • to taste Salt and Pepper Essential for seasoning.

Method
 

Cooking Instructions
  1. If starting with raw chicken, cook chicken in boiling water for 15-20 minutes, or grill/bake at 375°F for 25-30 minutes until fully cooked.
  2. In a mixing bowl, combine cooked chicken with sweet chili sauce, tossing to coat thoroughly.
  3. Prepare vegetables by washing and shredding greens, slicing cucumber, shredding carrots, and slicing red onion.
  4. On flat surface, lay out tortillas and spread mayonnaise or Greek yogurt in the center.
  5. Layer wraps with greens, sweet chili chicken mixture, carrots, cucumber, red onion, avocado, cheese, and cilantro.
  6. Squeeze lime juice over the ingredients and season with salt and pepper.
  7. Wrap the tortillas tightly by folding sides inward and rolling from bottom to top. Slice if desired.
