Method
 

Step-by-Step Instructions
  1. Trim any excess fat from the chicken thighs and place them in the slow cooker.
  2. In a bowl, whisk together brown sugar, soy sauce, bourbon, apple cider vinegar, ground ginger, honey, red pepper flakes, and garlic.
  3. Pour the sauce over the chicken and mix if necessary for even coating.
  4. Cover and cook on high for 4 hours or low for 6 hours until chicken is tender.
  5. Remove chicken and chop or shred it; set aside.
  6. Mix cornstarch and water, then stir into the sauce in the slow cooker.
  7. Return chicken to slow cooker, mix well, and cook on high for an additional 10-15 minutes.
  8. Serve over rice and garnish with green onions.
