Preparation Steps
- Start by draining the coconut water from a medium coconut using a corkscrew or sharp knife. Carefully split the coconut open and scoop out the flesh, chopping it into small pieces.
- In a high-speed blender, combine the chopped coconut flesh, 2 cups of fresh coconut water, and 4 cups of water. Add in the sweetened condensed milk, evaporated milk, and a splash of pure vanilla extract. Blend all ingredients on high for about 1-2 minutes, until the mixture is smooth and creamy.
- To achieve a smoother texture for your Coconut Cooler, strain half of the blended mixture into a pitcher using a fine mesh sieve.
- Pour the remaining 2 cups of water into the pitcher with the strained mixture, stirring well to combine.
- Fill serving glasses with ice to keep your Coconut Cooler refreshingly cold. Pour the blended mixture over the ice and garnish as desired.
