  • 1 can Evaporated Milk Can be substituted with coconut cream for a richer flavor.

  • 1 teaspoon Pure Vanilla Extract Optional, but recommended for aromatic quality.

Method
 

Preparation Steps
  1. Start by draining the coconut water from a medium coconut using a corkscrew or sharp knife. Carefully split the coconut open and scoop out the flesh, chopping it into small pieces.
  2. In a high-speed blender, combine the chopped coconut flesh, 2 cups of fresh coconut water, and 4 cups of water. Add in the sweetened condensed milk, evaporated milk, and a splash of pure vanilla extract. Blend all ingredients on high for about 1-2 minutes, until the mixture is smooth and creamy.
  3. To achieve a smoother texture for your Coconut Cooler, strain half of the blended mixture into a pitcher using a fine mesh sieve.
  4. Pour the remaining 2 cups of water into the pitcher with the strained mixture, stirring well to combine.
  5. Fill serving glasses with ice to keep your Coconut Cooler refreshingly cold. Pour the blended mixture over the ice and garnish as desired.
