Caramelizing Onions and Preparing Au Jus
- Melt 1 tablespoon of unsalted butter with 1 tablespoon of olive oil in a skillet over medium heat. Add sliced yellow onions and stir frequently for 12-15 minutes until golden and fragrant.
- In a small saucepan, combine 2 cups of low-sodium beef broth, 1 tablespoon Worcestershire sauce, 1 tablespoon soy sauce, 1 minced clove of garlic, and a few sprigs of fresh thyme. Simmer for about 5 minutes and season with salt and black pepper.
Assembling and Grilling Sandwiches
- Layer one slice of crusty French bread with Swiss cheese, followed by sliced roast beef and caramelized onions. Top with more Swiss cheese and another slice of bread.
- Spread softened butter on the outer sides of each sandwich. Preheat a skillet over medium heat and grill for about 3-4 minutes per side until golden brown.

- Remove grilled sandwiches from the skillet, slice diagonally, and serve warm with au jus for dipping.
