- Preheat your oven to 350°F (180°C) and prepare a 9x13-inch baking dish with cooking spray.
- Cook the diced bacon in a skillet over medium-low heat until crispy, about 10–12 minutes.
- Remove bacon and drain on paper towels, leaving 2 tablespoons of grease in the skillet.
- Sauté the diced yellow onion in the reserved bacon grease for about 5 minutes.
- Add chopped button mushrooms and cook for about 5 minutes until golden brown.
- Stir in the minced garlic and cook for another minute.
- In a large bowl, mix cream of mushroom soup, crumbled bacon, milk, and shredded Monterey Jack cheese.
- Fold in drained canned cut green beans and pour the mixture into the prepared baking dish.
- Sprinkle French fried onions over the top of the casserole.
- Bake uncovered for about 30 minutes until bubbly and golden brown.
- Let cool slightly before serving warm.
