Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Add the egg, vanilla extract, and apple cider to the mixture and beat until combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet mixture until just combined.
  5. Fold in the diced apples gently to avoid overmixing.
