Brine
  • 2 tablespoons Extra Virgin Olive Oil or regular olive oil
  • 1/2 cup Water
  • 1/4 cup Fresh Parsley or substitute with basil or arugula
  • 2 cloves Garlic grated
  • 1 tablespoon Lemon Zest fresh zest preferred
  • 2 tablespoons Lemon Juice or lime juice as an alternative
  • 1 teaspoon Fine Salt
  • 1/2 teaspoon Black Pepper
Toppings
  • 8 ounces Fresh Mozzarella sliced into ½-inch pieces
  • 1/4 cup Grated Parmesan Cheese omit for dairy-free option
  • to taste Freshly Ground Black Pepper and Optional Chili Flakes for serving

Method
 

Preparation
  1. Prepare the easy no-knead pizza dough, mixing flour, water, and yeast as instructed. Cover and let rest for at least 1 hour until doubled in size.
  2. Preheat your oven to 450°F (230°C).
  3. Slice fresh mozzarella into ½-inch pieces and pat them dry with a paper towel.
  4. Shape rested dough into a rectangular or round shape approximately 9x13 inches.
  5. Combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and black pepper in a jar. Shake until emulsified.
  6. Pour the prepared brine over the shaped dough and evenly distribute. Add mozzarella slices.
  7. Transfer pizza onto a preheated pizza stone and bake for about 8-10 minutes until golden and cheese is bubbly.
  8. Once baked, remove from oven and drizzle with lemon juice, sprinkle with grated parmesan, parsley, and black pepper.
